About us

For the food, the Chef Cedric Nicolas Philosophie is to work with local and organic producers and use the ancestral French technics of cooking. Quality produce is the base of quality food. For the wine, the Maitre d’Hotel Vincent Samarco goes through France’s enormous range of native grapes and terroir varieties to find men and women whose winemaking philosophies are respectful of mother nature, hence practicing farming techniques that are biodynamic, organic or sustainable with minimal intervention.
